This adjustable grip latch provides infinite adjustment, but without tools whatsoever! It operates like a screw, just turn clockwise to tighten, counter-clockwise to loosen. When opening, the cam backs away from the frame of your door, then swings out of the way, allowing the door to open.

There's even an indicator tab that shows you the orientation of the pawl!
